flour 80% unbleached white, 20% red fife wheat
water 80%, 85 fahrenheit
salt 0.2%

For easter weekend, kept things simple and focused on the basics.

Had one of the best crumbs this time around.

It’s amazing what a bit of time and folds can do.

  • Planning on working through my pre-oven cuts.
  • Slowly ramping up the % of red fife.
